ELIDIA Series extra virgin olive oil is produced from Koroneiki olive fruits. Indisputably, Koroneiki is the flagship of the Greek olive tree cultivars. It is one of the oldest cultivars of olive trees and every year some of the finest olive oils around the world are produced from the fruits of this unique tree.
For the ELIDIA Series extra virgin olive oil, we harvest our olives at the peak of their maturation process which is indicated by the deep purple-black color of the fruit. This timing choice helps us produce an extra virgin olive oil of a milder organoleptic profile, which demonstrates a pleasant fruity character with bitter and pungent elements in balance.
