Elidia is a group of passionate olive oil producers from the island of Crete, Greece. We implement a vertical production model, which allows us to monitor every stage of the production process from the cultivation of the trees in our family-owned olive orchards, up to the bottling and the marketing of our olive oil products.

Since its launch back in the ‘60s, Elidia has always placed in the core of its existence nothing else but its people. Producers and consumers. Our products are produced by people for people. Each bottle of ELIDIA Extra virgin olive oil is unique and represents not merely our work, but more importantly our family’s name.

We wish to welcome you in our world and share with you our most valuable secret. Olive oil is not just food for the body but nourishment for the soul. We follow a tree-to-table approach to achieve the highest possible quality for our products. Time is of essence in what we do. From the very moment we cut the olive fruit from the tree, a process of degradation is triggered due to oxidation. We need to minimize the time interval from that moment of separation until the moment the fruits are milled to extract the oil. Therefore, we implement a strict policy of delivering the fruits to the mill within 6 hours upon harvest.

The successful implementation of a vertical production model requires very clear processes within our structure and good communication between the different departments of the company. The greatest challenge in my role is to bring together on the same page people with different working portfolios who always claim priority for their operations. Fortunately for me, all of them stand united under the same cause. The production of an extra virgin olive oil worthy of all their efforts.
