Extra virgin is a term used to describe the highest quality grade in olive oil. The process of turning olive fruits into a natural juice ofexceptional taste and mind-blowing aromas is dynamic and requires knowledge, preciseness and complete dedication every step of the way. The producer shapes the final result through an extensive variety of choices and decisions he is called to make from the moment the olive fruit is taken from the Mother-tree until the moment the first drops of olive oil exit the production cycle. Our products’ portfolio consists of conventional, organic and Protected Geographical Indication (PGI) extra virgin olive oils, produced in our family-owned olive orchards (within the broader region of Chania, Crete), with the use of sustainable methods such as Organic and Integrated production. It has been put together in a way that emphasis is given on the multiple different taste characters we can get from our olive oil depending on several factors, such as the cultivar of the fruit, the harvesting period, the production method and many other. Ultimately, we wish to prove to our consumers that olive oil in not merely just another vegetable oil or some substitute for animal fats
