Our products’ portfolio consists of early harvest, conventional, organic and Protected Geographical Indication (PGI) extra virgin olive oils, produced in our family-owned olive orchards (within the broader region of Chania, Crete), with the use of sustainable methods such as Organic and Integrated production. We produce evoos which vary in terms of
  1. The type of the olive fruit used (cultivar)
  2. The stage of ripeness of the olive fruits at harvest
  3. The method of farming used
  4. The milling parameters applied during the cold extraction process for the production of our evoos.
All the above contribute to the final taste profile of the extra virgin olive oil produced. That exact contribution is what we are looking to highlight through each of our evoos. We seek to stimulate consumers' curiosity, hoping they will begin to wonder how and why can one extra virgin be different from another. Our early harvest collection consists of 3 different labels of extra virgin olive oil which may differ in many ways (organoleptic profile, cultivar, terroir etc), however they are all tied up to the same perception. That of olive oil being a vessel of aromas and flavors. ELIDIA Selections Chania PGI, ELIDIA Cuvee and ELIDIA The Heart Project are limited production extra virgin olive oils we produce from unripe green olive fruits harvested early in the season. Three evoos produced with a noble objective, to become nourisment not only for your body but first and foremost for your soul.

ELIDIA Series extra virgin olive oil is produced from Koroneiki olive fruits. Indisputably, Koroneiki is the flagship of the Greek olive tree cultivars. It is one of the oldest cultivars of olive trees and every year some of the finest olive oils around the world are produced from the fruits of this unique tree.
For the ELIDIA Series extra virgin olive oil, we harvest our olives at the peak of their maturation process which is indicated by the deep purple-black color of the fruit. This timing choice helps us produce an extra virgin olive oil of a milder organoleptic profile, which demonstrates a pleasant fruity character with bitter and pungent elements in balance. A safe choice for the palate of the average olive oil consumer. Aware of the varying household needs, we have put together a wide range of packaging options for our consumers to choose the one that best fits their needs.

Our organic extra virgin olive oil is produced from Koroneiki olive fruits, following practices of organic farming. It is the result of a cultivation method characterized by a minimum human intervention to the olive tree biological cycle and the use of solely natural supplies to support the olive tree.
